Some growers talk about working without additives—Romain Hénin built an entire estate around it.

Born into four generations of vignerons in Aÿ, Romain served as cellar manager at Champagne Henri Giraud before returning to his family’s vines. Conventional farming was never an option. By 2016, he leased his first hectare, converting it immediately to organic and biodynamic viticulture. A summer harvest with wine legend Patrick Bouju sealed his conviction: Champagne should be made with nothing added, period.

Today, La Bulle Libre is the domain Romain created after taking over from his father, Pascal. Alongside his brother Thomas—a chemical engineer turned vigneron—they farm seven Demeter-certified hectares across Aÿ and Mareuil-le-Port. There are no tractors in these high-trained vineyards; instead, horses, fruit trees, and cover crops form a thriving agroforestry system.

In the cellar, every parcel is pressed on their great-grandfather’s historic 4,000kg vertical press—the only press on the property. Everything ferments in barrel with zero bâtonnage, no filtration, and zero added sulphites. Most remarkably, secondary fermentation is triggered using the natural sugars of the following year’s fresh must rather than commercial tirage—an uncompromising, labour-intensive detail that sets Hénin apart as one of the most exciting young growers in France today.

Chapitre II is a 2023 vintage blend of 50% Meunier, 40% Pinot Noir, and 10% Chardonnay. Aged a full year in barrel and disgorged in December 2025 with zero dosage (Brut Nature), this is a stunning and vinous champagne that you don't want to miss. Bright citrus, baked pear, white florals, green almond, and crushed chalk. A fine, velvety mousse gives way to driving minerality and a long, saline, intensely energetic finish.
